Description
This apricot puree recipe combines fresh apricots with sugar, honey, and optional almond extract. Blend it until smooth and serve it with oatmeal, yogurt, pancakes, desserts, or baked goods.
Ingredients
1¼ pounds ripe apricots (6 to 8), halved and pitted
2 tablespoons granulated sugar
2 to 3 tablespoons mild honey, plus more to taste if needed
⅛ teaspoon almond extract, optional
Instructions
1. Wash the apricots, cut them in half, and remove the pits. Leave the skins on, or peel the apricots if you prefer a finer texture.
2. Place the apricots in a medium saucepan with the sugar, honey, and optional almond extract. Cook over medium-low heat for about 10 minutes, stirring occasionally, until the apricots are very soft and have released their juices.
3. Let the mixture cool for a few minutes, then transfer it to a blender or food processor. Blend until smooth. For a finer texture, pass the puree through a fine-mesh strainer.
4. Taste the puree and adjust the sweetness or almond flavor if needed. Add any extra honey or almond extract gradually, blending after each addition.
5. Transfer the puree to a clean glass jar or airtight container. Let it cool briefly, then cover and refrigerate.
Notes
Storage: Refrigerate the cooled apricot puree in an airtight container for 3 to 4 days. Freeze it in small freezer-safe containers or ice cube trays for up to 3 months. Thaw in the refrigerator and stir before using.
