Description
Make a homemade version of Arby’s Spicy Chicken Cheesesteak with seasoned chicken, caramelized onions, melted white American cheese, and a simple spicy glaze on toasted sesame rolls.
Ingredients
Scale
Chicken and Onions
- 1 1/2 lb boneless, skinless chicken breasts, thinly sliced
- 1 tsp paprika
- 3/4 tsp garlic powder
- 3/4 tsp onion powder
- 3/4 tsp kosher salt
- 2 tbsp neutral cooking oil, divided
- 1 large yellow onion, thinly sliced
Homemade Spicy Glaze
- 1/4 cup cayenne-style red hot sauce
- 1 tbsp honey
For Assembly
- 8 oz white American cheese
- 4 soft sesame seed sub rolls
Instructions
- Season the chicken. Thinly slice the chicken breasts against the grain. Toss with the paprika, garlic powder, onion powder, kosher salt, and 1 tablespoon of oil. Refrigerate for 20 minutes while preparing the onions.
- Caramelize the onions. Heat the remaining tablespoon of oil in a large skillet over medium-low heat. Add the sliced onion and cook for 25–30 minutes, stirring occasionally, until soft and golden. Reduce the heat if the onions begin to burn. Transfer the onions to a plate. Wipe out the skillet, then split the sesame rolls and lightly toast the cut sides. Set the rolls aside.
- Make the spicy glaze. Combine the hot sauce and honey in a small saucepan. Warm over low heat, stirring until combined. Remove from the heat.
- Cook the chicken. Heat a large skillet over medium-high heat. Add the seasoned chicken in batches, spreading it into an even layer. Cook, turning as needed, until lightly browned and the thickest pieces reach an internal temperature of 165°F (74°C).
- Add the onions and glaze. Return all the cooked chicken to the skillet. Add the caramelized onions and homemade spicy glaze. Toss gently over low heat until evenly coated.
- Melt the cheese. Divide the chicken mixture into four portions in the skillet. Top each portion with 2 ounces of white American cheese. Cover briefly over low heat until melted.
- Assemble the sandwiches. Transfer one portion of the cheesy chicken mixture into each toasted roll. Serve warm.
Notes
- Cooper Sharp White American cheese is a close option for the cheese used by Arby’s. Regular deli white American cheese is a practical alternative.
- The spicy glaze is a homemade approximation, not Arby’s official formula. Its heat level depends on the hot sauce used.
- Cook the chicken in batches to avoid overcrowding the skillet.
- Refrigerate leftovers within 2 hours. Store for up to 3–4 days and reheat the filling to 165°F (74°C).
- Nutrition information is estimated per sandwich and may vary depending on the bread, cheese, hot sauce, and other ingredients used.
