Description

These crispy lobster cutlets are made with whole lobster tails, gently flattened, coated in Italian-seasoned breadcrumbs, and pan-fried in olive oil and butter until golden and cooked through.

Ingredients

Scale
  • 4 raw spiny lobster tails (6–8 oz each)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1½ cups Italian-seasoned breadcrumbs
  • 2 tablespoons fresh parsley, finely chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • ¼ cup olive oil
  • 2 tablespoons unsalted butter

Instructions

  1. Prepare the lobster tails: Using kitchen shears, carefully cut open each raw lobster tail shell and gently remove the meat. Keep the tail fin attached if possible, but don’t force it if it separates. Remove the dark vein if present and pat the meat dry with paper towels.
  2. Butterfly and flatten: Slice the thickest part of each tail lengthwise without cutting all the way through. Open it like a book, place it between two sheets of plastic wrap or parchment paper, and gently flatten with a meat mallet toward an even ¼-inch thickness. Stop if the meat begins to tear.
  3. Prepare the breading: Place the flour in one shallow bowl and the beaten eggs in another. Mix the Italian-seasoned breadcrumbs and parsley in a third bowl. Lightly season the lobster with salt and black pepper.
  4. Bread the lobster: Coat each lobster cutlet in flour, shaking off the excess. Dip into the beaten eggs, then gently press into the breadcrumbs until both sides are evenly coated.
  5. Pan-fry the cutlets: Heat the olive oil and unsalted butter in a large skillet over medium heat. When the butter melts and begins to foam, carefully add the cutlets without overcrowding the pan. Fry for approximately 2–3 minutes per side as an initial guide, turning gently. Cook in batches if needed and reduce the heat if the coating browns too quickly.
  6. Check for doneness and serve: Check the thickest part of each cutlet. The lobster should be pearly white or opaque and firm, with no translucent areas. Use a food thermometer when an accurate reading is possible. Drain briefly on a wire rack or paper towels and serve immediately.

Notes

  • The ¼-inch thickness is a guideline. Flatten the lobster gently and stop if the meat begins to tear.
  • Cooking time may vary depending on the size and thickness of the lobster tails. Use 2–3 minutes per side as an initial guide, not a guarantee of doneness.
  • The lobster meat should be pearly white or opaque and firm, with no translucent areas. Check the thickest part before serving.
  • Cook in batches if necessary to avoid overcrowding the skillet. Reduce the heat if the breadcrumbs brown too quickly.
  • If the tail fin remains attached, it is for presentation only and is not edible.
  • Serve immediately after frying for the crispiest coating.
