Ingredients

  • 1/2 cup pumpkin puree
  • 1/4 cup chia seeds
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • Pinch of fine salt

Instructions

  1. Add the milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla, and salt to a medium bowl. Whisk until smooth.
  2. Add the chia seeds and stir well until evenly mixed.
  3. Let the mixture sit for 5 to 10 minutes, then stir again to help prevent clumps.
  4. Cover and refrigerate for at least 2 hours, or until the pudding is thick.
  5. Stir before serving. Add your favorite toppings, if desired.

Notes

  • Use plain pumpkin puree, not pumpkin pie filling.
  • The pudding can also be refrigerated overnight.
  • If it is too thick, stir in a small splash of milk.
  • If it is still too thin after chilling, stir in a small amount of chia seeds and let it rest again.
